    Asador Contrapunto

    Asador Contrapunto embodies our gastronomic vision, built around three essential pillars. The first is produce and culinary tradition, always respecting seasonality and the surrounding landscape. In Castile, as one would expect, Soria-style crispy pork belly, mushrooms, Castilian soups, suckling lamb and the finest steaks form the heart of our offering. Wine also takes centre stage, complementing every dish and enhancing the dining experience.

    The second pillar is the charcoal grill, the soul of our cuisine. We use holm oak charcoal to grill everything from Tudela de Duero asparagus and fresh market fish to our carefully selected ox steaks from Casa Recimil in Lugo, subject to availability. Our aim is always to achieve the perfect degree of doneness and an authentic flavour.

    Finally, our team: professionals with extensive experience in both the kitchen and front of house, enriched by the knowledge, technique and sensitivity gained through their travels, which they bring to every detail.
