    Fresh vegetables, pulses and produce from the region’s orchards shape the rhythm of a cuisine that respects seasonal produce and its origin. Building on this vegetable base, the menu is completed with high-quality fish and meats, designed to offer a balanced journey through authentic and recognisable flavours, accompanied by a curated selection of national wines and refreshing beverages.

    In this commitment to product excellence, a careful selection of meats is also included, drawing on other livestock traditions such as the Galician one. Of particular note is the meat from Pazo de Recimil, sourced from oxen raised with respect for natural rhythms and animal welfare. The result is a distinctive cut with a velvety texture, deep flavour and an identity rooted in its origin, offered subject to product availability.
